Heat three cups of the milk the top of a double boiler until Blend the cornstarch, salt and sugar in a mixing bowl. Stir in the remaining one-half cup of cold milk. Pour the cornstarch mixture slowly into hot milk.

Stir constantly and cook over direct heat until it boils ‘and thickens. Place over boiling water, cover and cook 10 minutes longer, stirring occasipnally. Remove from heat, stir in butter and vanilla, and pour into large bowl or individual molds (such as custard cups) to cool. Unmold if desired and serve plain or with any preferred sauce or with preserves or fresh fruit, such as crushed straw. berries or sliced bananas. Serves five.

1% c. 1-inch pieces uncooked macaroni 2 tbsps. butter 1 tbsp. onion 2 tbsps. flour 1 tsp. salt Few grains pepper 15 tsp. celery salt 14 tsp. dry mustard 14 c. evaporated milk 1 c. drained, cooked or canned tomatoes i 1b. (lL c.) grated cheddar cheese 3 eggs, separated Cook macaroni in boiling salted water until tender. Drain and rinse with warm water. Cook onion in butter until tender but not brown; remove from heat. Mix flour, salt, pepper, celery salt and mustard; stir into the butter-onion mixture.

Slowly add the evaporated milk while stirring. Stir in the tomato pulp. Cook over low heat, stirring constantly, until thickened. Add cheese and stir until it melts; remove from the heat. Add the cooked macaroni and blend well. . Beat the egg whites until stiff but not dry; gently fold in the cheese-tomato mixture. Pour into a one and one-half-quart casserole. Set the casserole in a baking pan and put on the rack in the over.

Fill the baking pan with hot

Bake in a moderate over (350 degrees F.) for 40 minutes or until golden brown. Serve at once, Serves six.
