5 Ibs. cucumbers (6 to 8” long; 9 to 11 sliced cucumbers make 3% qts. sliced) 1% Ibs. onions, size large eggs (8or9 3 qts. water 152 c¢. plain salt 1 large red’ pepper 1 ¢. granulated sugar 115 ¢. brown sugar, packed firmly 3 c. white vinegar 1% tbsps. white mustard seed 2 tbsps. prepared mustard 11% tsps. celery seed 15 c. freshly ground horseradish root Wash cucumbers, cut into uniform slices 3% inch thick and place in an enamel or glass bowl. Peel onions carefully, slice into quarter-inch slices and lay carefully over cucumbers. Dissolve salt in water, pour over vegetables. Cover, let stand six to ‘eight hours or overnight. Next morning lift out carefully, so as not to break onion slices, into colander
