Crisp Salad Greens Before Using Them Put the egg white in a bowl; add the other ingredients, beating all together vigorously. Add caviar for elegance — one teaspoon, if you like. Do not use too much dressing on the salad. We also give you the muchliked Chef's Salad: Clean, crisp and cut in pieces, lettuce, endive, romaine and a bit of cress. Place in a salad bowl; add six anchovies, drained and chopped, and Julienne strips] of Swiss cheese. (Add a small Jar of antipasto, if you like) Pour over all a French dressing seasoned with one teaspoon walnut catsup and one of mushroom catsup (use plain French dressing if you use antipasto). Blend all well and serve very cold. Lorenzi Salad Dressing: One cup French dressing, one-half cup minced watercress, one-half cup minced green onions, one tablespoon sherry wine and one tablespoon Worcestershire. This must not stand too long. (Good with shrimp or vegetable salad.)

FISH FLORENTINE 1%; 1bs. fish fillets (haddegk, flounder, whitefish) 2 c¢. cooked seasoned spinach 3 tbsps. shortening 3 tbsps. flour 3 tsp, salt % tsp. pepper 114 c. milk 1; c. grated cheese 1c. soft bread crumbs, buttered — Put the fish into a saucepan with one quart of water, two teaspoons salt, a bit of bay leaf and two tablespoons vinegar. Bring to a boil; then simmer for 10 minutes, or until tender. Place the spinach in a shallow shortening-coated baking dish and arrange the fish fillets over the top. Melt the shortening in a pepper and blend. Add milk Cook until thickened. Add the cheese. Pour over the fish and sprinkle with crumbs. . Bake in a hot oven (425 degrees F.) for 20 minutes or until the crumbs are browned. Serves six to eight.
