- For Many More My friends here in Reykjavik picked out Icelandic pancakes as the one native dish they were sure I never had before anywhere. Not, at least, in the way they make them. They were right. The only trouble is one helping calls for more—and more more. My hostess worked ‘carefully over copying the recipe for me She checked with other housewives to make certain every ingredient was in proper measure. This is her recipe, a pride of the Icelandic housewife, a boon to every Icelander who enjoys good eating. . ® '®

ICELANDIC PANCAKES

1% ec. milk 1; tsp. salt i

eggs 2 tbeps. butter Jam and whipped cream. Sift the flour with the baking powder and salt. Stir the whole in. another bowl and add the flour. Pour milk gradually and beat until batter is quite thin and light. Have the pan very warm and remove it from the heat while pouring the batter into it. Allow about two tablespoons of batter for each pancake. Spread batter very thinly over the pan by moving it in circles. Put the pan back on the heat and bake each side of the pancake lightly, turning over with a broad, thin knife. It is important to make the pancakes paper-thin. When cooled, take each pancake and put a tablespoonful of whipped cream and some jam, preferably strawberry, on the flat

surface, then fold over like a napkin. Serve as a dessert or with coffee. 12 pancakes Delicious! y
