Add the sugar gradually, creaming after each addition. Blend in the egg yolks and the rind. Beat until fluffy. Add half the flour, then the milk and the remaining flour. Knead slightly to blend thoroughly. Shape into balls the size of a walnut. Dip into slightly beaten égg whites, then into the nuts. Place on greased baking sheets.
