If tuna fish casserole is featured in your meal, make it more attractive by weaving a biscuit dough topping. Add two tablespoons chopped parsley to a biscuit dough using two cups enriched flour. ¥ LAMB FRICASSER (For Tuesday dinner) 2 Ibs. shoulder lamb 21, tsps, salt 2 tbsps. margarine 2 thsps. flour 21% c. water 2 tbsps. lemon juice 14 tsp. lemon rind 68 small onions, left whole 2 large turnips, peeled and sliced 2 large carrots (chunks) Wipe the meat thoroughly, Cut into two-inch cubes, removing any skin. Salt lightly with two teaspoons of the salt. Brown a few cubes at a time in the margarine. (Use a heavy stewing kettle with a cover.) Remove the cubes as they brown to a separate dish. Sprinkle flour over the last pieces browned.

Stir thoroughly and brown the flour lightly. Add the remaining browned cubes, two cups of the water and one tablespoon of the lemon juice. Cover and simmer for one and a half hours, stirring occasionally. If necgssary, add the remaining half cup of water toward the last few minutes. Add the lemon rind, then place the onions, turnips and carrots over the meat, keeping the vegetables separated. Sprinkle the turnips with the remaining lemon juice. Sprinkle all the vegetables with the remaining one-half teaspoon of the salt. Cover and continue to simmer about 45 minutes. Do hot stir the vegetables into the stew. Six to eight small potatoes may be added with the
