achieved.
The causes for failure are three: Not enough PA is put into the
batter, there is biten a wrong choice of fruit, and improper baking technique, The majority of the fruit should eonsist of candied citron, pineapple, cherries, dates, orange and lemon peel, and the minor portion of raisins, Often raising are chief ly used, becalise they are less expensive, ‘but they should. never dominate the flavor, The fruit always should be moist and fresh. ‘If the least bit dry,

The high percentage of fruit
causes the cake to scorch easily, and a little Scorching ruins the flavor. The lowest. temperature obtainable in most ranges is not low enough. But if the pans or eans of cake: are placed on a shallow cookie sheet with an inch or 80 of space between and some water is added to the cookie sheet, the steam holds down the heat to the safe point of baking. THE DOCTOR ANSWERS—
By WM. A. O'BRIEN, M. D. QUESTION: How long should one take it easy after the appendix is removed? ANSWER: Most patients get out of bed within a few days after the operation. The wound is healed in a week or 10 days, and recovery is usually complete in two or three weeks.
Hot Yeast Rolls -
Freshly - baked yeast rolls - are mouth-melting the whole year ‘round. Many cooks like to use the refrigerator - in the roll - making process. At a temperature of 45 to 50 degrees F., most doughs can be kept satisfactorily for four or five days, portions being cut off for each day's baking. Rich, sweet doughs seem to have better keeping qualities than plain yeast doughs.
