Meats, cereals and fish leave an ash when burned in which the acidforming elements such as chlorine, phosphorus and sulfur predominate. Sulfur is present in foods chiefly in a neutral form, as in sulfwrcontaining amino acids, the chery cal building blocks of protein. But this sulfur is oxidized, or burned, in the body to form sulfuric acid. Foods that are high in protein content are therefore. generally acidforming. > » . » THE CITRUS fruits — oranges, and lemons — contain citric acid and acid potassium eitrate. But when these are burned in the body, the citrate is changed to carbonic acid which is a weak acid. Potassium, a basi¢ element, is left behind.
