Directions for packing peaches two ways—either hot or cold—in preparation for processing in a water bath canner are given by the specialists, Each method of packing has its advantages. The hot pack is more economical of jar space—about one more serving can be put into a quart jar than when peaches are packed without pre-heating. On tne other hand, peaches packed raw hold their shape better and ISok prettier in the jar, and on the table. There is some difference in flavor between home-canned peaches ‘packed hot and those packed cold, .but apparently it is a matter of personal preference which product tastes better. Whichever way the home canner decides to use, she should follow the directions from start to finish. Peaches not heated sufficiently in canning will not keep in storage.
