It is a boon . to good cooking to have these fine seasonings on hand. » o » PAN-BROILED TOMATOES (For Tuesday dinner) 8 large meaty tomatoes (2% lbs.) % c. butter (or half bacon drip- ! pings) ! \ 1 1 tsp, thyme | 1 tsp. salt 13% tbsps. finely chopped onion Wash tomatoes and cut out the core and the blossom end. Melt butter in a skillet, add the thyme, salt and _onion and simmer gently until onion is soft, about five minutes. . Slice tomatoes one inch thick or j cut them in half crosswise. Lay ’ them in the seasoned butter and Ye simmer slowly, spooning the fat over them from time to time. When tomatoes begin to soften on under side after cooking one or two minutes, turn carefully, using a panpake turner or large spatula. Continue cooking. They should not be cooked until mushy. Pour hutter over them when served. Garhish with parsley. Serves five,

Add Worcestershire sauce, salt ind mix ifn enough mayonnaise to bind ingredients together. This mixture may be used for a sandwich spread. When spread on potato chips it makes unusual hors d'oeuvres. Makes about 1% cups.
