Secret of Success Is Rapid Beating

14 c. sugar ‘34 tsp. salt ‘2 ¢. milk 2 eggs ; 1% c. crushed pineapple (No. 1 flat can) 2 ¢. left-over cake crumbs or crumbled vanilla wafers 3% ec. whipping or coffee cream 6 maraschino cherries 2 tbsps. pistachio nuts, if desired Blend cornstarch, sugar and salt in top of double boiler. Add cold milk and stir until smooth. Cook

until mixture boils and thickens. Slowly stir part of hot mixture into beaten eggs, then return to hot mixture in double boiler and cook over boiling water for five minutes, stirring gecasionally. Have egg whites beaten until stiff enough to bend over but still shiny, and fold these carefully into the hot mixture. Remove from heat. Brush a glass serving dish with melted butter, sift a layer of the cake or cookie crumbs over the butter. Now alternate layers of pudding, pineapple and crumbs until all are used, making last layer of crumbs. Cover and place in refrigerator to chill. Just before serving time, whip cream, spread over top of Jessert. Then sprinkle chopped pistachios over top and drop -the chopped cherries in the center.
