Coat with salted flour by putting salt and flour in clean paper bag, dropping pieces in one by one. and shaking thoroughly, In a heavy, deep skillet heat enough fat to make a layer % inch deep. Start cooking in fairly hot fat, placing thick meaty pieces in first, the less meaty pieces next. Fry slowly on both sides (about 30 minutes) until browned, then reduce to low heat, cover and continte cooking until done. Turn occasionally to brown, evenly.
