MINTED CARROTS (For atuanY dinner) 1 large bunch carrots . 14 teaspoon salt 3%. cup butter Pepper 2 tablespoons sugar 3 sprigs fresh tender mint Cut carrots crosswise into quar-ter-inch thick slices. Cover with boiling water, add salt and cook until tender, five to seven minutes. Add butter, pepper and sugar and continue cooking ‘until water is evaporated to one tablespoonful. Add mint leaves, chopped medium fine and toss to distribute mint.
(For Wednesday dinner) 1% 1bs. broccoli 3 tbsps. butter 2 thsps. flour 1% c. milk % tsp. salt 1 chicken-flavored bouillon cube 2 egg yolks 1 tbsp. lemon juice Cook broccoli until tender, remove woody peeling, slash stalks in half and cover with boiling water. k 10 to, 15 minutes. Make a white sauce, using butter, flour, milk, salt and bouillon cube, and add to beaten egg yolks, stirring thoroughly. Cook for five minutes and add lemon juice gradually. Serve over broccoli.
