AT THIS SEASON, potatoes are mature and contain little or no sugar whigh is most important for escalloping or frying. When potatoes are immature, or have begun to grow and show white sprouts, they contain sugar. This causes curdling in escalloping, and in frying they do not brown to a beautiful golden color, Ae Now is the time to make French fries, but with. fat expensive, -the

more economical cooking methods -

should be used. Here is a recipe for potatoes with cheese, w » " CHEESY CUBED POTATOES (For Monday dinner) 6 medium potatoes (2 lbs.) % 1b. cheese, grated 2 c. hot thin white sauce 1 tbsp. chopped pimiento Wash. potatoes, peel thinly.
