” r » MEAT BALLS WITH CELERY CREAM BAUCE - (For Wednesday dinper) 2 thsps. butter 2 tbsps, flour 13 tsp. salt 1 c¢. milk or 's c. evaporated milk and ': c. water 5 or 6 large branches pascal celery 1 lb. ground beef 11, tsps. salt Dash pepper . 1 egg, well beaten, Melt butter in saucepan, add flour and salt and mix until smooth. = Stir in cold milk gradually, and cook over direct heat, stirrigg constantly until sauce boils and becomes thick and smooth. Scrub celery, scrape away any blemishes and cut into uniform lengthwise strips; then cut into Ja-inch lengths. (There should be 2'3 c. diced.» Barely cover with boiling salted water and, cook at moderate rate until tender, about 10 or 15 minutes. Drain and add to cream sauce. : Mix ground meat with egg and seasoning and shape into little balls. Fry balls in two tablespoons bacon drippings until there is no red meat present when broken open. Pour creamed celery mixture over meat and serve immediately. Serves four.
