. BRAIN SOUFFLE . (For Saturday Luncheon)

1 1b, calves brains 1 tbsp. lemon juice ; 2% tsps. salt, % co. butter or margarine | 14 o. flour | 2 ¢. milk ' Generous dash pepper 5 eggs, separated Cover brains with cold water and let stand 15 minutes. Remove loose membrane: Pour off water, cover again with fresh water, add lemon Juice and one teaspoon of the salt and simmer for 30 minutes. Drain and ‘cool brains quickly in cold water (about one minute). Drain well and cut into small dice, Meanwhile melt butter, add flour and blend. Add milk gradually, stirring constantly over medium heat until mixture is smooth and thick. Add remaining 1'3 teaspoons salt and the pepper. Remove from heat and pour over slightly beaten egg yolk. Mix thoroughly and cool. Fold in brains. Beat egg whites until they stand in soft peaks. Fold into mixture lightly -but thoroughly. Turn .into ungreased eight-cup casserole. Place souffle on two baking sheets (one nested within the other) and bake at 325 degrees F. 50 to 60 minutes until puffed and golden brown. Re: move from oven and serve immediately. Sprinkle gelatin over the cold water. Melt butter in a saucepan, blend in flour afd~add milk; cook over direct heat, stirring constantly to keep smooth until sauce boils

hot salice into the beaten egg yolks, then add them to the rest of the hot sauce and continue to cook over low heat for one minute, stirring constantly. Remove from heat and stir in soaked gelatin. When dissolved, add salt (a teaspoon or to suit taste), lemon juice and sherry flavoring. Pour into fancy mold or loaf pan, using ripe olive slices to garnish the bottom of the mold, if desired. Chill in refrigerator until firm, When ready to serve, turn out onto chilled platter and garnish with watercress (or lettuce) and sliced cucumber. Serves six to eight.

Remove Spots

When furniture is marred by white spots caused by water, alcohol or hot dishes, rub the spot with camphorated oil.
