Wash uncooked rice thoroughly in several cold waters; drain, Add to scalded milk in top of double boiler, cook, covered, ‘over boiling water until rice is tender, about 40 minutes. Stir occasionally with a fork during the first part of cooking to keep rice from sticking. Beat two egg yolks thoroughly, add sugar and salt and stir in some hot rice mixture; return to rest of hot rice and cook two minutes longer, stirring constantly. Remove from heat and cool partially. Then stir in Vanilla. Beat the egg whites until stiff, gradually beat in five tablespoons of sugar until smooth. Fold into rice custard. Chill and serve with cream or top milk and with a garnish of jam or jelly on each serving. Serves five. ” » ” JIFFY LEMON PIE (For Sunday dinner) 89-inch baked pie shell 1 can condensed milk (1% ¢.) 1% ec. lemon juice 2 eggs, separated 1s tsp. grated lemon rind - 3 tbsps. sugar
Stir the lemon juice and rind and beaten egg yolks into the condensed (not evaporated) milk. Pour the thickened filling (no cooking) into the pie shell. Beat the egg whites until they are a thick foam, then add the sugar and whip until the meringue will form soft peaks that will bend over. Spread the meringue over the pie in bold swirls so there are hills and valleys and the meringue is as thick at the edge as it is in the center and it touches the pastry shell all around the edge. Bet the pan on two baking sheets with a thickness of newspaper between the baking sheets and place in a 350 degree F. oven (moderate) for the meringue to brown—12 to 15 minutes. Remove to a cake rack to cool. Serves five or six.

country and has been shown in the FrencH embassy in Washington and at a reception and style show in New York's Ritz hotel. The collection will be seen later in a number of other U. 8. cities, Its showing here following the recent introduction by the store of Mme. Ricel's newly created CouerJolie perfume, The audience that filled Block's auditorium . was on the alert for style points that differ in French and American fashions.

As for skirts (more than a smidgin longer than ours ) they shoot the works on pleated, draped or gathered fullness—frequently concentrated at the front. " . . THE ONLY spot at which the‘ Ricci designs went in for fabric conservation was at the waistline. There they were reefed so sharply as to bring back memories of hand-span waists and their whalebone aids. When the French say “tiny waist,” they seem to mean just that—and no dallying with a marshmallow parfait. Really sumptuous fabrics were notable in the collection, too . . . taffetas, brocades and stiff satins as beautiful as museum items. And, of course, the intricately detailed handwork at which the French excel was present. Mme. Ricci is especially noted for her formal dresses. For once, that overworked cliche, “breath-takingly beautiful,” was applicable. Those were the words for the ball gowns —particularly for a couple of strapless robes de style with wide, wide skirts.
