Food Poisoning
From | Cooked Foods
By JANE STAFFORD , Soclence Service Stall Writer COOKED FOODS, even such presumably safe foods as cooked potatoes, can cause food poisoning because of germs that get into the food after it has been codked. Such germs may come from an infected cut or sore on the hands
the. food between the time -it is cooked and the time it is eaten. Droplets sprayed from the cook's or other food handler’s nose and throat in coughing, sneezing or
inate the food with germs. LJ . " ONCE THE germs get into the food, they can multiply and produce their poison which is what causes sickness in the persons eating the contaminated food. If the
cannot multiply and produce enough .poison to cause sickness, unless an overwhelming number got into the food. A cook suffering from a “head cold” infected a platter -of sliced meat, although he did not touch the meat nor do the slicing. But! he stood over it while it was being! sliced, shouting orders to his helpers, and in this way transferred his germs to the meat which subsequently caused a food poisoning outbreak. » ® » MEAT GRINDERS, slicing machines, mixing bowls and other utensils may cause food poisoning if not thoroughly cleaned after each use. - Germs from the air may settle and grow in the bits of food left clinging and contaminate the
or into the mixing bowl. - The temperature of most kitchens and pantries is just about ideal for encouraging growth of food poisoning germs. Cooked food left standing for any time in the kitchen can become contaminated with a heavy enough dose of germs to cause food poisoning. Food that contains enough germs and their poison to make people sick may not appear to be spoiled and may taste, look and smell all right.
