APPLE CHARLOTTE (For ‘Baturday dinner)

1% 1b. cooking apples (about 3 ¢.) 1 tbsp. water 14 c. sugar % tsp. cinnamon 14 c. raisins 6 to 8 slices day-old bread % c. melter butter or margarine

Peel, core and slice apples into a| two-quart saucepan. Add water, and sugar and stir. Heat to boiling and cook slowly, covered, four to six minutes or until apple slices are transparent at the edges, stirring occasionally. Remove from heat. Add one tablespoon of the hot apple liquid to cinnamon to make a paste. Add raisins and cinnamon paste to apples, then cool. " Trim crusts from bread slices an fit pieces tightly into bottom, sides and top of a No. 2% tin can; remove pieces and dip in butter or margarine until coated thoroughly. Pit pack into can and turn in apple mixture, packing securely and fill-] ing to the top. Cover with top bread slice, then can lid. Place can in a shallow pan in center of rack of oven and bake in a moderate oven (375 ‘degrees F.) about 40 minutes. Remove from oven, invert and turn out onto serving plate. If bread slices on sides do not hold together, tie ribbon around the center. While hot, glaze with any desired fruit glaze or serve with cream. Serve while warm. Serves four. . » » .
