% 1b. ground beef 1 tsp. lard 1 tsp. salt Dash pepper 3 tbsps. flour 1% c.-milk 1 tbsp. chopped chives Skin liver and remove the tubes. Place the slices in a greased skillet, cover and place in the owen just long enough to heat through. Remove from skillet and grind. Cook ground beef in the skillet with 1 tsp. lard until delicately brown but not hard. Combine liver and beef. Season with salt and pepper. Cover and cook slowly for 10 to fifteen minutes. Blend in flour. Add milk gradually stirring constantly until sauce bolls and becomes thick and smooth. Chopped chives may be added or one small onion may be ground up (with the liver and cooked with the liver and beef if desired. Serve hot jon cornbréad or biscuits. Makes > servings.
