ASPARAGUS SALAD WITH VINAIGRETTE SAUCE (For Saturday luncheem) 1% Ibs. fresh asparagus 15 to 2 c. water 13 tsp. salt
1 tsp. grated onion 2 tbsps. vinegar % c. salad oil 1 tsp. chopped parsley 1 tsp. chopped celery 1 tsp. finely chopped green pepper, 1 tsp. finely chopped pimiento 3 tsp. salt Dash pepper 34 tsp. prepared mustard
Scrub asparagus with a brush, wash and remove scales. Break off tough white ends leaving only the tender stalk. Heat water rapidly to. boiling in a saucepan, add salt, stand asparagus stalks upright in it. Cook quickly uncovered, for 10 minutes, then lay asparagus down so whole stalks are immersed in water and cook for another 10 minutes or until stalks are tender.
Cool asparagus in its liquid by standing in a pan of cold water. Meanwhile combine sauce ingredients in the order listed above. Lift cold asparagus stalks from liquid to salad plates lined with lettuce leaves, and serve topped with sauce, Makes 4 salads.
” ” FRESH RHUBARB COBBLER (For Sunday dintér) 1 1b. fresh rhubarb (about 2% c.) 4 c. water % c. light corn sirup % tsp. cinnamon 1 tbsp. butter 2 ¢. emergency flour % tsp. baking powder
15 tsp. salt 2 tbsps. shortening 14 tsp. grated lemon rind 1 egg, beaten 2 thsps. milk TY to 2 thsps. sugar, if desired Plain cream or sweetened whipped cream. Trim rhubarb and wash thoroughly. Cut into one-inch pleces and place in saucepan with 2 tbsps. of the water. Cover, heat to boiling, cook slowly for three minutes. Then turn into a shallow baking dish (preferably square). Combine corn sirup and remaining water and pour over rhubarb. Sprinkle with cinnamon and dot with butter. Bift flour, measure, and resift three times with baking powder, sugar and salt; the last time into a mixing bowl. Cut shortening into dry ingredients until mixture is consistency of coarse corn meal. Add lemon rind, beaten egg and milk and stir until flour is just moistened. Drop by teaspoons on rhubarb mixture. If desired, sugar may be sprinkled over biscuit mixture to give added sweetness and crust’ appearance. Bake in a moderately hot oven -(400 degrees F.) for 35 minutes.
