BAKED POTATO WITH RICH -FRANKFURTER BAUCE (Per Saturday luncheon) 4 medium baking potatoes (10 os. each) . 3 thsps. butter or margarine 4 frankfurters, sliced % inch thick 3 tbsps. flour 1 tsp. salt 2 ¢. milk 2 eggs, unbeaten ; Select four medium-sized baking potatoes, scrub them thoroughly with a brush, and place in a moderately hot oven (400 degrees F.) to bake for 40 or 50 minutes or until done when pierced with a fork. Meanwfille prepare sauce by melting butter or margarine in a saucepan and sauteing frankfurter slices slowly until lightly browned. Stir in flour and salt, using a low flame, and add milk slowly, stirring constantly, When sauce has thick-

ened. slightly, drop in. unbeaten eggs and stir only slightly. The | finished product will have bits of cooked egg yolk and white appearing throughout the sauce. Cook slowly for about three minutes after adding eggs. When done, remove potatoes from oven and cut in half, lengthwise. Serve immediately topped with rich frankfurter sauce. Makes four servings. ” » » JELLIED BEET SALAD (For Sunday supper) 1 ¢. boiling water 1 pkg. cherry-flavored gelatin 2 tbsps. vinegar ; No. 1 tin diced beets 14 c. chopped celery Crisp lettuce Mayonnaise Pour hot water over gelatin and stir until dissolved. Place vinegar in a measuring cup and add liquid drained from beets (and water if necessary) to make one cup; stir liquid into gelatin mixture,
