Nursing School Plans ‘Capping’ Ceremony

A class of 92 pre-clinical students of the Methodist hospital School of Nursing will participate in traditional capping exercises at 8:15 p. m. Monday in the Bropdway Methodist church. The service welcomes "the girls into the Student Government association. Miss Bette Thompson, association president, will welcome the class, and the honor student of the 1948 class will respond. Dr. Orien W. Fifer will be the principal speaker, and Robert E. Neff, hospital superintendent, will extend greetings. The caps will be presented by Miss Hazel B. Whittern, superintendent and principal of the nursing school, Miss Rena Davis Moore, director of nursing education, will present the students. TUNA FISH AND CARROT SOUFFLE

(For Monday's Luncheon) 2 tbsps. margarine ' 3 tbsps. flour 3 ec. chicken or veal stock or 1 chicken bouillon cube dissolved in 3 c. hot water 15 c. milk 2 egg yolks 14 tsp. salt 1, ¢. finely grated raw carrot 1 tbsp. chopped parsley . 7-0z tin tuna (1% c¢.) drained and crumbled into small pieces.

Blend margarine and flour in saucepan over low heat. Add stock or bouillon cube and milk slowly, stirring constantly; cook until smooth and thickened. Beat two egg yolks slightly, add part of the hot mixture, blend, then combine with remaining hof mixture. Add salt, carrot, parsley and tuna. Fold in two stiffly beaten egg whites. Pour into well-greased baking dish (6 cup) and bake 40 to 45 minutes in 350-degree F. oven. Serve immediately, Makes four servings.
