LAMB BARLEY STEW

(For Monday's dinner) 2 lbs. shoulder lamb : 8 c. boiling water 1 onion 2 pieces bay leaf 3 pepper corns 2 or 3 sprays celery tops 8 tbeps. barley 8 med. potatoes 8 small carrots 8 small onions 1 c. canned tomatoes 2 tsps. salt. Cut shoulder lamb into serving portions. Place in a three to four quart pan. Barely cover with boiling water, about three cups. Add onion - sliced in half, bay leaf, pepper corns, celery tops and

barley; cover and simmer until

barley and meat are almost done, about 15 hours, Add potatoes, carrots, onions, tomatoes and salt. Simmer until meat and vegetables are done, about 45 minutes. Make a thin water-flour paste (5 tbsps. flour to 2 c. water) and pour into stew, stirring well to blend. Bring to a boil and cook a few minutes longer. Arrange on platter, making an. attractive display of vegetables and meat. Serves four,
