which we were losing for a leng time, : LJ » ” FRIED EGGPLANT AND CHEESE SANDWICH (For Monday luncheon) 1 medium size eggplant 4% tsp. prepared mustard 1 tsp. salt 4 slices cheese (% 1b) 1 egg well beaten 1 tbsp. water 1 ¢, corn flakes crushed 4 ¢. drippings.

Peel eggplant and slice into 6-inch glices. Spread half of the slices with mustard and sprinkle with half the salt, Add a slice of cheese to each of these and top with remaining slices of eggplant. Using a fork and spafula to hold each sandwich together, dip each side into the egg and water mixed and then the crushed corn flakes (which have been mixed with remaining salt). Brown on each side over medium heat in the drippings. Lower heat and cook four or five mintites on each side until eggplant is tender and cheese is melted. Serves four. E 8 ”
