ALMOST EVERYONE 1S FAMILIAR with fried eggplant, and a new variation of the dish ‘appears in the menus for next week. The addition of a slice of cheese brings the dish out of the vegetable class into that of a good main dish for luncheon. You'll find the fried eggplant and gheese sandwiches in next Monday's luncheon menu.
MONDAY

These may include a variety of plain and sugared doughnuts as: a centerpiece, flanked by mugs of cider. A rich dark devil's food cake (sugarless) is another suggestion. Everyone likes it—and it has the recipe: ¥ » » MOLASSES DEVIL'S FOOD 1% c. shortening 1 c. molasses (2 well-beaten eggs. ‘2 melted squares chocolate 1 tsp. vanilla. 3 1% c. sifted all-purpose flour OR 2 c. sifted cake flour 1% tsps. baking powder 1% tsp. baking soda 1% tsp. salt 1 ¢ milk Cream shortening. Add mo« lasses and eggs, creaming well after each addition. Then add chocolate and vanilla, beating well after each addition.
