NEXT TO GOOD warm homemade bread, golden-brown, crunchy - crusted, tender - hearted doughnuts, fresh from the frying kettle, are one of the most popular foods, with the typical American family. Here's the recipe. . 8 DOUGHNUTS 312 c. all-purpose flour, 4 tsps. baking powder. 12 tsp. salt, % tsp. nutmeg. 1 tsp. soda. 2 eggs. 1 ¢. sugar. 14 tsp. vanilla. 1 c. buttermilk. 2 thsps. melted butter. Deep fat for frying. 8ift flour, measure and resift three times with baking powder, salt, nutmeg and soda. Beat eggs, add sugar and vanilla and beat well for about two minutes. Add the buttermilk and butter, then the flour mixture and mix un*il smooth. This dough is too soft to handle immediately, but first must be chilled in the refrigerator for two or three hours. Lightly flour surface for rolling and roll dough to a little more than %-inch thickness. Cut with doughnut cutter. Remove trimmings care fully. Reroll these, using as little flour as possible. Slip a spatula under doughnuts and carefully slide into hot fate 375 degrees F. Turn as soon as browned on lower side and fry until brown on other side. Remove doughnuts with a fork or skewer and drain on absorbent paper. If sugar-coated doughnuts are desired, they may be dropped

spoonfuls of powdered or granulated sugar and shaken to coat.
