Breakfast

Grapefruit halves. Ready-to-eat cereal with sugar and! cream. | Buckwheat pancakes and maple sirup (see recipe). Dinner Fruit cup. Oven fried chicken, Escalloped potatoes. Buttered peas and carrots. Parker house rolls. Yellow cake with chocolate frosting. Supper Canned cream of mushroom soup. Grilled bacon and tomato sandwiches. Yellow cake with chocolate frosting. Milk to drink: Four c. for each child; 2 c. for each adult. No ration points used today. " o » Buckwheat pancakes: One cake compressed yeast (12 oz), 4 ¢c. warm water, % c. cornmeal, 4 ¢. buckwheat flour, 1 c. all-purpose flour, 1 egg, beaten, 1 tsp. soda, 1 tsp. baking powder, 1% tsp. salt, 2 thsps. sugar, 2 tbsps. molasses, % c. sweet milk, Mix yeast and water... Add cornmeal and flours and beat well. Let stand in a warm place over night. In the morning add the remaining ingredients, adding more soda if it is too sour and additional milk if the batter needs thinning. Reserve 1 ¢. of the batter as a starter for the next morning’s batch of pancakes. Use the cupful of the batter in place of the yeast; add the rest of the ingredients in the recipe and mix in same manner and let stand over night again. Bake on a moderately hot, greased griddle, turning each one once during the baking. Makes 3 dozen, 5-in. pancakes.
