Marble cake (see recipe). Milk to drink: Three c. for each child; 1 ¢. for each adult. Two ration points used today. ” ” ’ Marble cake: Two c. sifted allpurpose flour. 3% tsps. baking powder, 1 tsp. salt, 1% c. sugar, 3 C. vegetable shortening, 1 c¢. milk, 1 tsp. vanilla, 2 eggs, 1 sq. melted, unsweetened chocolate, 12 tsp. soda, 2 tbsps. hot water. Line bottom of an 8x12-in. pan with wax paper. Do not grease sides, Sift flour, baking powder, salt and sugar into mixing bowl; add shortening, milk and vanilla and beat fbr 2 mins. Add eggs and beat for 2 more mins. Pour % of this batter into the prepared pan. Add chocolate to the remaining batter. Then add the soda dissolved in water. Beat for 2 min. Pour choeolate batter over the light batter and run a knife through several times for marbled effect. Bake in a 350 degrees F. oven for 35 to 40 mins. or until cake tests done. Cool on rack for 15 mins. before removing from pan. Cool thoroughly before frosting.

For Meat Course
Braised oxtails make a satisfying main course for a meat-hungry family. Here's the recipe. 1 oxtail 2 thsp. lard 2 medium-sized oniohs 2 tbsp. vinegar 2 tbsp. vinegar 2 tbsp. Worcestershire sauce 1 tsp. salt % cup tomato sauce or catsup 1 tsp. chili powder 4 cup water Have oxtail cut in short lengths for ox joints. Brown well on all sides in hot lard. Add remaining ingredients. Place in porcelain enameled pot or kettle, cover tight ly and simmer for 2 to 2% hours, or until tender. Serves four,

Macaroons: Four oz. almond paste, (obtained from a baker or specialty 2 c¢. granulated sugar, 3 tbsps. confectioner’s sugar, 1, thsp. all-purpose flour, dash of salt, 2 unbeaten egg whites, 4 tsp. vanilla. Combine almond paste and granulated sugar and work with fingers until thoroughly blended. Add confectioner’s sugar, flour and salt and mix. Add egg whites and vanilla and stir, Drop from a tsp. onto unglazed, unoiled paper. Allow to set for 3 hrs. Bake in a 300 degrees F. oven for 20 mins. Place paper on moist towel to remove macaroons.
