» " EJ Hot potatoe salad: Two strips bacon, cut into small pieces, 2 thsps. flour, % c water; 2 thsps. vinegar, 1% lbs, freshly boiled potatoes, peeled and sliced, 2 c¢. chopped celery, 1 small sliced onion, % tsp. salt, 1% tsps. prepared mustard, 1%; tsps. sugar, 1/16 tsp. pepper, 1 ¢. shredded endive, 2 ¢. grated carrot. Saute bacon for 10 mins. Remove pieces and blend flour into the fat remaining in pan, add liquids grad-
thickened and smooth Stir constantly. Add potatoes, celery and onion and very carefully tilt pan back and forth to bring sauce over the vegetables. Heat through, then add remaining ingredients and mix carefully so that the potato slices are not broken. Remove from heat, immediately top with bacon pieces and serve. Serves 4.
