VICTORY GARDENERS who want to harvest a good crop of vitamin ‘A this summer are careful

not to pull their carrots too soon nor to leave them in the ground too long. Carrots are one of the best vegetable sources of vitamin A, though other yellow vegetables and fr and the green, leafy vegetables also furnish this vitamin, Actually, the plants do not contain the vitamin, but a chemical which the body converts into vitamin A. The chemical that becomes vitamin A is called carotene and, as you might ‘guess, it got its name from the carrot. Vitamin A is essential for good growth and development of children, but recent: nutrition studies have shown that elderly people need more of it than was supposed. This vitamin plays an important role in vision: and shortage of it may lead to night blindn&ss and other disorders. The skin and the mucous. membranes such- as the lining of the nose and throat are affected by the amount of vitamin A in the body.
