Quick carrot and celery soup. Peanut butter sandwiches. Ice cream. Dinner Giblets and rice (see recipe). Escalloped tomatoes. 7-min. cabbage wedges. Stuffed prune salad. - Cookies. o ” Giblets and Hout One ¢. giblets and all leftover chicken, 2 c. water, 1, tsp. salt, %4 c¢. minced onion, 3 tbsps. fat, 12 oz. pkg, dried mushrooms, 2 c¢. cooked rice. Cook giblets in water and sait. Simmer: gently until tender, 2 to 2'2 hrs. Add liver at last 4 hr. of cook= ing. Cut up cooked giblets and add to the leftover, cut chicken or duck. Concentrate cooking liquid to 1 c. Saute onion in heated shortening, add broth giblets and mushrooms and simmer for 15 mins. Add rice and giblets and mix. Reheat to serve. Serves 4.
