Caramel Custard: pt. milk, 4 tbsps

Two eggs, 1 1, tsp. salt, 2 tbeps. melted butter. Beat eggs slightly with a fork or a rotary beater but do not whip. should be mixed thoroughly but not until fluffy, Combine milk, sirup and salt and stir into eggs. Add butter. Pour through strainer into individual custard cups. Set cups into shallow pan of hot. water. Bake in a moderately slow oven at 325 degrees F. for 30 mins., or until custards are set. The center should still be slightly underdone when remoyed as custard continues cooking for several mins. after it is taken frem the oven. Serve with caramelized sugar sirup drizzled over top if desired. Serves 4 to 5.
