OUR INSPIRATION FOR THIS SOUP COMES from the Chinese. They serve the cress in whole sprigs in a mouth watering chicken stock along with alabaster cubes of bean curd. The following soup will be
equally pleasing but easier to eat the water cress. :

Watercress soup: On. 1b. veal
knuckle bone, 1 qt. cold water, 1
small onion, 1%; tsps. salt, 1 med. carrot, % ec. chopped celery, sprig parsley, % bay’ leaf, 1 bunch coarsely cut watercress. Place all ingredients except watercress in kettle and bring to boiling point, .cover and reduce heat and allow to simmer gently

for 114 to 2 hrs. Remove bone and just before serving add cress. Serve at once. 4 to 6 servings. » » s Apple dumplings: Plain pastry, 4 apples, Jonathan, 4 tsps. butter, % c. corn. sirup, % c. brown sugar, 6 thsps. water, 2 tbsps. lemon juice, % -tsp. cinnamon. Make a pastry of 1% e. flour, % tsp. salt, 6 tbsps. lard, 4 to 5 thsps. water.- Peel and core apples, place in buttered baking pan (wide and deép enough to hold all four apples without crowding). Cut apples part way down into sections, stil] retaining original shape for quicker cooking. Pour remaining ingredients over apples, cover with pastry rolled to fit top of baking pan. Cut vents in top over each apple. Bake at 450 degrees F. for 12 to 15 mins. Reduce heat a 325 degrees F. and continue baking for 30 mins, until apples are tender. Serve warm with top milk. Miss Joan Henning will present a group of Christmas readings and music will be by the Butler-Jordan choir under the direction of Joseph Lautner. Mrsy Floyd W. Schorn will preside at the business meeting and Mrs. Joe Hill and Mrs. C. C. Bagley will pour at the tea.
