WHEN DATES ARE AS SCARCE and as expensive as they are now, they are not a practical item to buy for glorifying cakes and cookies. Prunes are abundant and are reasonable in price, so we have used them in place of dates and find they are quite successful pinchhitters. The prunes need to be steamed a few minutes to soften. The seeds will then pull away easily and the prunes may be finely chopped.

1 bouillon cube, % tsp. paprika, 2 c. fresh cooked or canned lima beans, 2 thsps. minced parsley. Saute onion in the melted butter until soft and transparent. Blend in flour and salt. If canned beans are used, drain off liquor, measure and add water to make % e. Add the bouillon cube and paprika. Bring to a boil and simmer for 2 mins., stirring constantly until smooth and thickened. Add the lima beans. Heat thoroughly. Add parsfey and serve hot. Serves 4.
