Stewed mixed fruits (12 1b. diced). Hot whole wheat cereal (4 servings). Toast and homemade jam . slices). Cheese souffle (3% 1b. cheese—5 red points, use 2%). Tossed lettuce salad (1 small head, garlic dressing). Rye wafers (1 small pkg.). Ambrosia (3 bananas, 8 large oranges, grated fresh coconut— remainder from Thurs.). Dinner Boiled smoked tongue (see recipe; reserve about % for Bat. and Sun.). Creamed new potatoes (1% Ibs. potatoes, 1% ¢. med. white sauce). Fresh asparagus salad (1 1b. asparagus, cooked, chilled, served on lettuce leaves with tart mayonnaise). Bread (8 slices). Chilled baked custard with maple sirup. Ice-box cookies. ” » - Boiled smoked tongue: 4 Ibs. smoked tongue, 3 branches celery, 1 whole carrot, 1 small onion, § whole black peppers, 3 whole cloves, 1 small bay leaf. Cover tongue with cold water. Let water come to boil, drain off and cover tongue again with cold water. Add remaining ingredients. Cover; simmer about 3 to 4 hours. Lift tongue from liquid, plunge into cold.water to cool slightly, then remove and discard skin and roots at base. Return tongue to liquid and let it remain until serving time. (Water in which tongue is cooked may be | used for cooking vegetables.) Serve! with hot sqyory sauce,
