Rice Puffs With Green Bean Celery Sauce: c. rice, 1% c. milk, 14 tsp. salt, % tsp. lemon rind, 2 eggs, separated; 4 oz. American cheese, % c¢. chopped parsley, % c. dried breadcrumbs. Cook rice with milk and salt, about 1 hr., covered in double boiler, until milk is absorbed, stirring frequently with a fork. Cool slightly, add lemon rind and beaten egg yolks. Add cheese and parsley. Fold in stiffly beaten egg whites thoroughly. Grease 4 custard cups (% c. capacity) and dust with fine breadcrumbs. Fill with rice mixture. Bake 45 mins. at 350 degrees Turn out on serving plate and serve immediately with:

Green Bean Celery Sauce: 1 c. thinly sliced green beans, 1 c. bolling water, 3% tsp. salt, % c. finely chopped celery, 1 tbsp. flour, 2 tbsps. butter, 1 chicken bouillon cube, i ¢. milk, % tsp. onion juice, Cook beans in water with salt for 6 to 7 mins, adding celery during last 3 mins. of cooking. Blend flour and butter in sauce pan. Add bouillon cube, then milk gradually, stirring constantly until mixture thickens and bubbles. Combine with beans, add onion juice and. simmer about 1 min.
