Jelly roll: Sift, measure % c. cake flour and sift twice again with 1| tsp. baking powder, 3% tsp. salt and | it ¢. sugar. Put 4 eggs into porcelain mixing bowl, or any other howl -that will absorb heat. from hot water. Place over vessel containing hot water. Beat with rotary egg beater until almost thick enough to

1 tsp. vanilla, then sift flour mixture in small quantities over egg mixture and fold in as before. Turn into a baking sheet lined with waxed paper. Bake at 400 degrees F. 13 mins. Turn out onto cloth sprinkled with powdered sugar, pull off paper carefully, cut away crisp edges, spread immediate ly with one 8-0z. glass of tart jelly, Roll carefully and cover with cloth until ready to serve. - t J » Meat custard: 2 tbsp. chopped onion, 1 tbsp. pork drippings, 1 14oz. can evaporated milk (1% ¢.), % c. pork gravy or stock, 1 tsp. salt, 3 eggs slightly beaten 2 e¢. hot cooked rice, 1 ¢. leftover pork cut in thin strips, % 1b. spinach cleaned and wilted, pepper. Saute onion in the drippings for 5 minutes. Add the milk, gravy, salt and pepper and heat to stalding and pour over the eggs. Add the rice. Spread the meat in a greased baking dish (7%x11%x2). Add the rice mixture and the spinach in the center. Place in a
