First, learn to vary the meat used. Beef is good, but lamb, pork or veal or a combination is tasty. And the addifion of cereal will extend the supply of meat, Here's how meat “flapjacks” are made:
Try meat loaf squares with onion rings on top; meat-rice cones or croquets with a spicy sauce, or. casseroled layers. of meat and vegetables. . Even the “extender” may be varjed. If you usually use rice, try bread crumbs or macaroni or grated raw potato. Vary the seasonings, too. » » o SCOTCH MEAT LOAF 1 lb. ground meat (beef, veal or lamb) 1% cups rolled oats 2 teaspoons salt 1, teaspoon pepper 1 egg 114 cups milk 14 cup ketchup -2 tablespoons chopped onion.
Combine meat, oats,” salt and §| pepper. Beat egg; add, Add milk, ketchup and onion; mix well.’ Pack into greased loaf pan. Bake in moderate oven (350 degrees F.) 1 hour. Serves, 6.
Mixing the Ingredients
Combine 2 cups ground cooked lamb, pork, veal or beef with 2 cups| cooked oatmeal, 2 beaten eggs. Salt and pepper to taste. Mix thoroughly,

Combine chopped pork, pork fat and chopped onion. Add seasonings and water. Simmer 10 minutes, stirring occasionally. Remove from fire, add bread crumbs and let cool. Line a baking dish with half the pastry. Fill dish with pork mixture. Cover with remaining
Method of Cooking
Drop by tablespoons into small amounts of hot fat. Brown on both sides.
