Combine cherries and juice; add combined dry ingredients, adjusting amounts of sugar and flour according to sweetness and juiciness of cherries, and mix thoroughly. Line pie plate with pastry and fill with. cherries; dot with butter and adjust top crust or arrange lattice of pastry strips on top. Bake in hot oven (450° F.) 10 minutes; then reduce heat to moderate (350° F.) and bake about 25 minutes longer. Yield: One two-crust {3-inch) pie.
