There are fascinating ways to extend the flavor of meat by com-| bining it with other wholesome foods. WHOLE WHEAT PASTRY TOPPING

2 cups sifted whole wheat flour 1 cup sifted all-purpose flour 1 teaspoon salt % cup shortening 5 tablespoons cold water

Mix flour and salt: Divide shortening into two parts. Cut in first half until mixture is gs fine as meal. Cut. in remaining shortening until particles are size of peas or beans. Use a “light hand” in mixing and do not overmix! Add the water, a tablespoon at a time and mix thor-

1 cup whole wheat cereal 3 cups water 11% teaspoons salt 2 tablespoons grated onion 1 large carrot, finely grated * 2 cups chopped cooked pork °

Add salt-to water and bring to boiling point in top of double boiler over direct heat. Add cereat slowly to boiling salted water, stirring constantly. Continue cooking and stirring until thick, then add the onion and carrot. Place over boiling water, cover and cook 25 minutes. Add the meat and pour into greased loaf pan, Chill. When firm, cut slices %-inch thick, dip each slice in flour and fry until golden brown on bath sides, Yield: 18 slices—6 to 8 seryings.
