These: Desserts Will Not Eat Into Your Sugar Allotment

NOW THAT SUGAR RATIONING actually has begun, housewives will be looking for desserts that will take only a small portion of their weekly allotment. Here are two desserts: easy on the sugar ration. The sunshine pudding extends its nutrition inexpensively with bread

grumbs. The apricot pie uses dried SUNSHINE BREAD PUDDING

{ Ha (6 servings) One and one-half cups grated or ground raw carrot, 3. cup yellow corn syrup, 2 eggs, slightly beaten, 3 tablespoons orange juice, grated rind 1’ orange, grated rind 1 lemon, % teaspoon - salt, 2 cups coarse, enriched white bread crumbs (4 slices bread with crusts), 12° cup chopped nuts. Combine grated carrot, corn syrup, eggs, fruit juice and rinds and salt, Fold in enriched white bread crumbs and nuts. Transfer to buttered baking dish. Cover and bake in moderately hot oven (375 degrees F.) about 40 minutes. Uncover during last 10 minutes’ baking time to brown top. Serve warm or cold, with toffee sauce. -

. TOFFEE SAUCE

Combine in saucepan % cup yellow corn syrup, 3% cup undiluted evaporated milk and 2 tablespoons butter. Cook over low heat, stirring ¢ constantly, until butter melts. Add 1 teaspoon vanilla. Serve warm. Makes 1% cups sauce. :

GOLDEN APRICOT PIE One-half pound dried apricots,

gelatin, 1 pint hot apricot juice and water, 14 teaspoon salt, 1 baked 8-inch pie shell.

Combine apricots and sugar. Dissolve gelatin in hot apricot juice and water. Add salt and pour over apricots. Chill. ‘When slightly thickened, turn into cold pie shell. Chill until firm.. Cover with whipped cream if desired, or garnish with additional stewed, dried apricots.

milk, including milk’s share of vitamins, and to many persons is a more appetizing food than milk. It is an excellent source of protein and since it is cheaper than meat, can be frequently served as a meat substitute for the main course, if the housewife’s food budget is. limited. Cheese is a very concentrated food and a good source of energy. A one and one-half-inch cube of American cheesc furnishes 100 calories. Cheese is about one-third water, one-third fat and one-third protein. ‘The: harder cheeses contain less water and the softer ones contain more. Cream cheese has a higher fat content than most other varieties and cottage cheese, which is made from skim milk, has a very low fat content. It is also low in calories, there being only 100 calories in five tablespoons of this kind of cheese. 2 E J t 4

CHEESE HAS HAD the name for being indigestible or causing digestivé disturbances. Actually it is over 895 per cent. digested and. absorbed, though it does slow down digestion in the stomach. Digestive disturbances or distress after eating cheese are attributed to eating too. much cheese at one time or to eating it with a heavy meal or at bed-time. Authorities recommend eating cheese with foods that do not themsélves contain much fat. Standard examples ‘are cheese sandwiches or macaroni and cheese.

Mr. Mason gave his daughter in marriage. She wore a yellow suit with brown and white accessories and an orchid corsage.
