meat on a clean, dry shallow dish and cover lightly with waxed paper. Store promptly in coldest part of refrigerator
humidity prevent. shrinkage and loss of color through excessive drying. 4. Give ground and chopped fresh meats especially good refrigeration and cook as soon as possible. ‘3. Closely cover all cooked meats and keep refrigerated. For ease in covering, cut meat and fat from bone, but do not grind or chop until just before using. 4. Arrange food containers to allow’ a circulation of air between, Shelves crowded with paper bags and containers block passage of cold

will enhance casseroles, scalloped dishes, cream sauce, or cold salads. Grind smaller bits to use in patties, loaves, croquettes, timbales, sandwich fillings, omelets or gravy. 6. Don’t overdo leftover dishes. Any family tires of a “review of reviews” and anyway, keeping cooked food long is false economy because of spoilage and lowered refrigerator efficiency. 7. Learn how to buy more closely ‘for your family. To save fuel in cooking, buy roasts and pot-roasts
to serve two or three meals. Pur- .
chase other cuts in adequate amounts for one meal. A good rule to follow is this, FOR EACH SERVING allow not less than: Boneless cuts - and ground meats Cuts containing some bone % pound ' Canned meats ............3 ounces Dried beef ....y00000....1% Ounces Dry sausage ............2-3 ounces Bacon ..2-3 slices; 8. Low cooking temperatures safeguard waste in meat preparation by conserving flavor, juiciness and number of servings. Too high temperatures drive off juices, weaken flavor and shrink meat. 9. Use a meat thermometer. Overcooking as well as too high’ tem-

perature "destroys volume and flavorful juices. Pork, which should be cooked . to the well-done stage, becomes: dry. ang: less ‘tasty by cooking an extra 15 Jee minutes: Beef and even lamb are juicier and more flavorful, and yield more servings | per pound if less well-done than often served. Fuel waste is also a big item in too long cooking. 10. Cook liver slowly and only until brown and tender. Over-cook-ing hardens liver, destroys flavor and is the cause of many a person’s distaste of this super-vitamin meat. 11, Use fats from meat for shortening, seasoning or frying. Clarify and keep cold, dark and dry.
