festive layer cakes a disappointing failure. The layers cracked on the top and the cake was very dry. I have been baking for some years and always make fairly passable cake. Can you suggest a reason for my failure this time? A—If the oven is too hot the cake will brown on the top before it has sufficiently risen; then, when the [heat reaches the center of the layer {or loaf, and it begins to rise, it will break through and crack ‘the crust.
