10 to 12 vertical sections canned pineapple and syrup 8, pound ground ham 1, pound ground beef 1% pound ground fresh pork 1 egg 1% cup bread crumbs 1 teaspoon salt 1% teaspoon pepper 1 teaspoon Worcestershire sauce, if desired 3, teaspoon dry mustard 2 tablespoons butter 2 ‘sprigs: parsley Drain canned pineapple thoroughly and reserve the syrup. Mix the ground ham, beef and fresh pork in a mixing bowl. Add 2 cup of the pineapple syrup, the egg, beaten, the bread crumbs, salt pepper, Worcestershire sauce and dry mustard. Mix thoroughly and shape into 5 large or 10 small thin patties. Preheat the broiler and arrange the patties on the rack of the cold broiler pan. Insert under the broiler so that the patties are about 4 inches from the heat. Meanwhile brush the verticle sections of pineapples (pieces about the height of can, sold under various trade names) with melted butter. : Broil - large patties 10 minutes, turn, add pineapple sections, and broil 10 minutes more. Start small patties and pineapple sections at same time. Broil patties 5 minutes, then turn and broil 5 minutes on second side. Do not turn pineapple. Arrange on a platter and garnish with parsley. -
