By MARIAN YOUNG Times Special Writer NEW . YORK, July 11.—Next best thing to a trip to Mexico or South America this summer is a long, leisurely stroll down the air-cooled aisles in the departments for outdoor furniture in some of the smartest shops. Not only are these departments ablaze with Pan-American patterns, colors and gay pottery, but they feature chairs of hand-woven blankets, stretched over low frames of bent. wood, and a wonderful array of all types of furniture, made of hides, combined with wood. : A good-looking table has a top of hide, laced over the bamboo frame. There’s a comfortable chaise of matching hide and a side chair . with. hide back ‘and. seat. For those who cannot have a full set of new porch furniture, decorators suggest modernizing old pieces by using cushion covers in some bold Mexican or Guatemalan motif,

Ordinary tender beef requires weeks ‘of ageing, loses Tenderay’s fresh qualities.

FOOD

By Mrs. Gaynor Maddox

HERE'S SOME food with an “all aid to Pritain” flavor. The British War Relief Society is distributing “Old and New British Recipes” ($1), a sturdy little volume packed with ~ practical yet traditional recipes. Let's take a look:

YORKSHIRE BUTTFRMILE BREAD Three and one-half lbs. flour, 1% 1bs. moist sugar, % 1b. lard, 1 1b. raisins, 114 lbs. currants, % 1b. mixed peel, 1 tablespoon carbonate of soda, buttermilk. Mix all ingredients, dissolving §0da, in ga little buttermilk to a stiff paste; then loosen it with more buttermilk, and bake in a moderate oven from 2 to 3 hours in four oaves.

walnut meats, chopped, 3 cups flour, 1 teaspoon vanilla, 1 teaspoon baking soda, 1 cup boiling water. Dissolve baking soda in boiling water. Beat butter and sugar; add beaten eggs and mix in fruit and

nuts. Add flour, dissolve soda and |

add last. Drop on buttered tins and bake in a fairly hot oven.

STEWED OX TAIL Two ox tails, 1 onion, 3 cloves, 1 blade mace, % teaspoon whole black pepper, % teaspoon all-spice, % teaspoon salt, small bunch savory herbs, thickening of butter and flour, 1 tablespoon lemon juice, 1 teaspoon mushroom ketchup. - Divide the tails at the joints, wash, and put them into a stewpan with sufficient water to cover, and set them on the fire; when the water boils, remove the scum, and add the onion cut into rings, the spice, seasoning, and herbs. Cover the stewpan closely, and simmer gently until tender, which will take about 21% hours. Take the tails out, make a thickening of butter and flour, add it to the gravy, and let 4 hour. Strain it through a sieve Tite saucepan, put back the tails, add the lemon juice and ketchup; let the whole boil up, and serve. ‘Garnish with croutons or sippets of toasted bread.

DEVONSHIRE CREAM (This recipe is 150 years old.) Take four pints of new milk, set it on a clear fire, and stir it now and then; when it comes. to a boil, take it off, and put it into broad dishes to cool; stir it about in the

turned out of the pan; set in a cool place, and let it stand 24 hours: then skim off the clots with a skimmer, and lay them on a dish: put sweet cream about them, and strew cinnamon and sugar over them. ” o ”

HOME-MADE ice cream is an ideal hot’ weather dish. Remember that it’s a food. If you include ice cream in your menus, consider it an integral part of the diet, not just something extra.

APRICOT ICE CREAM (Makes % quart) Onhalf package (scant % cu vanilla ice cream powder, 2 tablespoons sugar, 1 cup milk, 1 cup cream, whipped, % cup dried apricots, cut in thin strips. 3 Combine ice cream powder and sugar. RASPBERRY SHERBET (8 to 10 portions) Two pint boxes red raspberries, 1 cup sugar, 1 cup water, pinch of salt, juice of 1 orange, 2 egg whites. Wash berries, crush and. cover with sugar and water. Allow to stand a few minutes. Heat to boiling and strain through fine cloth. Chill. Add salt, orange juice, and egg white. Freeze in crank freezer. One part rock salt to eight parts crushed ice is good proportion for sherbet. Turn slowly to produce fine texture, increasing the speed the ‘last few minutes to increase bulk.

To prevent curtains s.rinking, measure both dimensions before laundering and dry on a stretcher extended to the correct size, or spread on a clean sheet, stretch and pin to previous measurement and dry in sunshine.

be just what you need to give your white and royal blue grouping a real lift.

Most decorators agree that it’s best to stick to two colors on a small porch or even a mediumsized terrace. A riot of color can be anything but restful on a hot afternoon in midsummer. Yellow and blue, yellow and green, red and blue, red and white, blue and white, brown and yellow are among the foolproof color schemes for out-of-doors. For the tiny porch terrace, it’s usually best to use one of these colors on big pieces of furniture with another shade as accents here and there. Any bright shade, combined with white, is a cheice that cannot be beat. : Most sophisticated color scheme for porch or terrace is all-white. Pillows for chairs and sofa are covered with white, water resistant fabric. Iron or wood frames are lacquered to match the pillow covers, and tables .are of wrought iron, painted white, with white tile tops. In one corner, there are red geraniums in a huge white pot. Another sophisticated, subtle color scheme on a porch in a group 7f exhibit rooms makes use of aliwhite - furniture—placed on a blue and white plaid rug. A blue bowl, on the white coffee table, .is filled with - white snapdragons and scarlet poppies.
