CAULIFLOWER POLONAISE : (Serves 4 to 6)

One head cauliflower, 2 hardcooked egg yolks, 1 tablespoon minced parsley, % ° cup bread crumbs, 2 tablespoons butter. Trim off outer stalks of cauliflower and cook head (whole) in boiling salted water for 20 to 30 minutes or until tender. Drain and place on hot serving dish. Put egg yolks through sieve, mix with minced parsley and crumbs which have been browned in butter. Sprinkle over cauliflower and serve at once.

BRAISED CELERY HEARTS (Serves 4 to 6)

. Three or 4 celery hearts, 1 tablespoon chopped onion, 2 tablespoons butter, salt, pepper, beef broth. Trim off outer stalks and leaves of celery, and split the hearts in halves. Cook onion in butter for few minutes, arrange. celery on top, season with salt and pepper . and then moisten with beef broth. Cover and simmer over low heat for about 20 minutes or until tender.

BRUSSELS SPROUTS AU BEURRE NOIR (Serves 4 to 6)

~ One quart Brussels sprouts, 1 teaspoon salt, 4 tablespoons butter, 2 tablespoons vinegar. Cook Brussels sprouts in boiling salted water to cover, until tender (about 12 to 15 minutes). Drain and keep in warm saucepan. Melt butter and allow it to brown thoroughly. Remove from fire and add vinegar slowly. Pour over sprouts and serve at once. BROCCOLI WITH CHIVE SAUCE One bunch broccoli. Sauce: 2 tablespoons butter, 2 tablespoons flour, 1 cup meat stock or water, 1 tablespoon lemon juice or vinegar, 3 tablespoons chopped chives,

IN HOT WEATHER, appetites are apt to turn finicky and cannot always be relied on as a guide to selection of a nourishing meal. If the heat increases your taste for green vegetables, salads and fruits, and milk or buttermilk as beverages, that

These foods are good sources of the valuable minerals and vitamins needed to stay well and gain the extra health demand by national defense efforts. Good nutrition, however, calls for other foods besides fruits and vegetables. It calls for some fat, for carbohydrates such as bread, cereals and the like, and it calls for protein foods such as meat, fish, poultry,

vegetables—peas nd beans. If you take your carbohydrates in the form of whole grain cereals and bread, or the new enriched bread, you will be adding to the nourishment from these foods by the extra vitamins and minerals they contain.

WHEN IT GETS REALLY HOT, many people, especially women, are tempted to eat only cold foods, and not very much of them. Medical authorities point out’ that it is a mistake to eat only cold foods in hot weather, and that while too much food on a hot summer day may produce digestive disturbance and even heat exhaustion, people who work hard cannot afford to undereat.
