artichokes. The olive oil, ration, however, is limited to about a quart a month per person. Butter, although rationed, is plentiful. Meat restrictigns are testing the ingenuity of Italian cooks in the preparation of spaghetti sauces. One of the favorite sauces is bolognese,

made of rich beef gravy thickly mixed with pieces of chopped beef. Beef is available only three days a’ week, so housewives are substituting poultry livers, hearts and gizzards and the livers and kidneys of lambs and goats. The use of bacon, which practically was unknown in Italy before the war, has increased so rapidly that it
