Because _ veal is inherently lacking in fat it is often desirable to “lard” a roast, =that is, insert strips of fat throughout the lean or put a generous . tovering of ‘bacon slices over the “top of the roast. Season the roast with salt and pepper. Place it on a rack in a “khallow, open roasting pan. Insert ca meat thermometer so that the + bulb reaches center of the thickest “muscle. It “4s not necessary to pound or score veal steaks. Brown the steaks well on both sides in a heavy frying-pan, then add a little liquid, cover and cook at a reduced temperature until tender. Sour cream or tomato juice are excellent suggestions as the liquid to be used in braising veal; sour cream is especially good, since it adds both flavor and fat. Veal birds are steaks, spread with dressing and rolled and tied into shape and braised. Here is. a particularly tasty recipe that#ombines the delicate flavor of veal with a savory bread stuffing and a mushFoom sauce. . DEAR JANE, JORDAN—I am a senior in high school and will

ibe 18 years old goon, To our school has come a young teacher only ifive or six years older than I am. I do not have him in any of my

subjects but I have met him and have been going out with him. He is awfully nig: and I am beginning to think a lot of him. I have

{a girl friend whe has been trying to get him away from me. Some-

itimes she succe ds. I know I am jealous but I try not to be.

| Everyone tells nie that he will lose his job if I continue going with him. Do you think he will if we know how to act? I think I afn old enough to know how to behave. All of the

| older folks like ‘him and think it is nice that I can go with him,

| but some of the boys keep saying I'm going to make him lose his job. I would nejer want that to happen. These are the two things that have me fvorried. First, will I make him lose his job, and j second, how - I keep him and not let the other girl get him?— ANXIOUS.

Answer] b young man ought to know whether or not it will | get him in troufjle if he goes with one of his students. Isn’t ‘he old | enough to take the responsibility? Everything depends upon the | attitude of the {ichool heads. If there is a ruling against instructors | going about witli their students, his action will reflect to his discredit. Usually the orcs in ages between teachers and students is | sufficient to preent such problems from arising but this young man | is close enough/to the ages of -the girls he teaches to cause quite a romantic flurry in the school. At least the] situation calls for very discreet conduct. Let your demeanor be extremely sedate and dignified. The moment you act y someone will criticize you. Usually it is the girl st from gossip, but -in this instance the young man for the lion's share because of the responsibility
