In summer, when bread is stored at relatively high temperatures, this type of fermentation may cause considerable waste. The organisms causing ropiness seem to be present in some cases in the flour but they mav be in potatoes, or in liquid yeast that is saved from one baking to another, or on utensils. DEAR JANE JORDAN--I read with great interest the letter sighed “Experienced.” (Her hushand left her alone at night until she started to go out alone herself; after that they went together.) My husband is away nights for business reasons and for his own pleasure. I live out of the city and have three young children from five to eleven. TI am often lonely and my only pleasure is reading and raising my lovely little boys. 1 get into town about once every Six or seven week, have been to a show three times in three years. A short ride on Sunday is the whole of my outside interest, I should like very much to £0 and do as “Experienced” has done but I don't have the money. He is a real estate agent and since business falls off during the fall months, there is only one more month of good business. We don't have any money put aside for the winter, even for school books or school clothes. Last winter both our parents furnished food and fuel, but have told us they will not help us this winter. This spring I expected that my husband would take us out to push back the memories that were so unpleasant but he went out with friends on the few evenings he had free and I sat at home. Since I have no money I can’t buy anything to sew on or to indulge my hobby which is making paper flowers. As for the hobby bringing in my spending money, 1 don’t have the least idea how to go about it. It seems as if I'm destined to sit at home while life goes on without me, wanting things and pleasures I can’t have. ALWAYS HOPEFUL.

Answer—You sign yourself “Always Hopeful” but that is not really your attitude. What you hope is that someone will tell you the way out, but you have no hope of finding your own way out. I'm afraid no one has either the ability or the time to do this for you. Many families go through periods of hardship similar to yours and worse. Some are more ingenious than others in devising means of relieving the monotony. Where are your friends? A woman of vour age should have accurnulated a circle of friends who can call on her in the afternoon and perhaps take her for a drive. If you've made your company something to be desired, people will seek you cut, even if you are isolated, just for the fun of talking to you or having lunch or a cup of tea with you. I don’t know if you have anv neighbors within walking distance or not. If you have you can find companionship which costs nothing, by exchanging neighborly courtesies, It depends on how friendly you feel toward others and how interested you are in their pursuits. If you can sew, perhaps you can sew for others. You don’t have to be a fancy dressmaker, You can make children’s clothes, smocks, aprons and housedresses. Customers can be found through inexpensive classified advertising. The next time you're in town, stop in a small store and see if you can induce some neighborhood storekeeper to put your flowers on sale. If you're really good at making them, he might advance the materials. Then you can take a firmer stand with your husband and insist on one night a week away from home for calls on friends or cheap movies. Tt is possible to make him understand your loneliness without nagging. Try not to tear him down, but express your faith in his ability to whip the financial situation. Tt will fill him with hope and make him feel more kindly toward you. Perhaps other isolated wives will be kind enough to write and tell how they fill up their time. JANE JORDAN.
